Grilled Pimento Cheese with Bacon and Tomato Sandwich
INGREDIENTS
12 oz packet of thick cut bacon
1 slicer tomato
1/4 cup In the Curious Kitchen Pimento Cheese
2 slices sourdough bread, or sandwich bread of choice
Mayonnaise
1 tbsp butter
Salt
Pepper
DIRECTIONS
Gather your ingredients. Cook bacon until crispy. We recommended in a 400-degree F oven on a parchment lined sheet pan for 18-20 minutes.
Cut your tomato with a serrated knife into 1/4 in slices. Sprinkle slices with salt and pepper and set aside.
Assemble your sandwich. Spread Pimento Cheese on one side of both slices of bread. Layer on 3 to 4 tomato slices and 4 to 5 slices of crispy bacon.
Close sandwich. Mayonnaise or butter outside of sandwich bread.
Heat frying pan on medium heat with butter. Sear both sides until golden and cheese is melted.
