Grilled Pimento Cheese with Bacon and Tomato Sandwich

INGREDIENTS

12 oz packet of thick cut bacon

1 slicer tomato

1/4 cup In the Curious Kitchen Pimento Cheese

2 slices sourdough bread, or sandwich bread of choice

Mayonnaise

1 tbsp butter

Salt

Pepper

DIRECTIONS

  1. Gather your ingredients.  Cook bacon until crispy. We recommended in a 400-degree F oven on a parchment lined sheet pan for 18-20 minutes.

  2. Cut your tomato with a serrated knife into 1/4 in slices. Sprinkle slices with salt and pepper and set aside. 

  3. Assemble your sandwich. Spread Pimento Cheese on one side of both slices of bread. Layer on 3 to 4 tomato slices and 4 to 5 slices of crispy bacon.

  4. Close sandwich. Mayonnaise or butter outside of sandwich bread.

  5. Heat frying pan on medium heat with butter. Sear both sides until golden and cheese is melted.
