Roasted Salmon
New year means a renewed focus on eating better. I have always struggled with the word diet, its so limiting. What is not limiting is to serve good, healthy food with flavor. To cook and eat better means you have to take the time and shop for the high quality ingredients. If it is made from a box then you are not getting a nutrients that your body needs to fuel itself. Buying whole foods will serve you long term, food taste better and the benefits outweigh any time that you may think is saved by using a convenience item or heading through the drive through.
To be clear, I am always having to check myself especially after the holidays. For whatever reason I feel like I can eat whatever I want from Halloween to Christmas. Thats not the case of course. I feel better and have so much more energy and my skin looks better when I am fueling my body with good food. Salmon, rich in Omega-3 fatty acids, it is the perfect protein to roast and enjoy with a salad or to make dinner even easier roast alongside some asparagus or brussel sprouts.
INGREDIENTS
4 salmon fillets
Olive oil
2 blood oranges
Kosher salt
Freshly ground pepper
DIRECTIONS
Preheat oven to 400° F
Place salmon fillets, skin side down on parchment lined sheet pan, drizzle fillets with olive oil, juice from one blood orange, salt and pepper. Place thin blood orange slices to the top of each fillet for added flavor.
Roast to medium for 12 minutes.
Serve with a fresh green salad and a side of Roasted Brussel Sprouts for a healthy and delicious meal.
