Frozen Watermelon Mint Julep

Mint juleps in and of themselves are refreshing and I enjoy them year-round, not just for Derby season.  There’s just something about that icy cold julep cup that makes them perfect for a steamy hot summer day. Adding the watermelon was just a bonus because watermelon is pure perfection in the summer and added a curious twist to that classic cocktail.

INGREDIENTS

2 cups frozen watermelon

1/2 cup Kentucky bourbon

1/4 cup Mint Simple Syrup

1/4-1/2 cup ice

DIRECTIONS

  1. To make Mint Simple Syrup, combine 1/4 cup fresh mint leaves, 1/2 cup sugar, and 1/2 cup water in a small saucepan over medium heat. Bring to a boil, boil the heat, and allow the sugar to dissolve. Remove from heat and pour syrup through a strainer to remove mint into a glass measuring cup.

  2. Combine all the ingredients in a blender until smooth.

  3. Garnish with fresh mint leaves.

Makes 2-3 cocktails
