Hot Cherry-Spiked Bleu Cheese Crackers

I simply cannot resist a good cracker especially if it is topped with cheese, filled with cheese or made with cheese. Just to be clear…I love cheese.

If the cracker is made of my favorite of favorites bleu cheese and the cracker is topped with a fresh cherry you better watch out! This might not be your typical go-to flavor combination but somehow it works. And it works well. Don’t be afraid of flavor.

INGREDIENTS

1 cup all purpose flour

1 stick of butter, softened

4 ounces bleu cheese or gorgonzola (bleu’s tasty Italian twin)

3 teaspoons hot sauce

9 fresh cherries, cut in half

1 teaspoon honey

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Line cookie sheet with parchment paper, cut additional paper to roll cracker log.
  3. In a food processor with blade attachment, add in flour, butter, cheese and 2 teaspoons hot sauce. Blend until dough comes together and forms a ball.
  4. Dust cutting board with flour. Roll dough into a log, about 8” to 10” long.
  5. Wrap log in parchment paper and refrigerate for a least 30 minutes.
  6. Slice chilled dough into 1/4” slices. Place slices onto parchment lined cookie sheet.
  7. Mix honey and 1 teaspoon of hot sauce into dish. Place halved cherries into honey mixture, toss to coat.
  8. With your thumb, press into the center of each cracker. Place a cherry into indention.
  9. Bake crackers for 15 minutes or until golden brown.
Yield: 20 crackers
