Pecan Cheese Wafers Recipe

Ingredients

  • 2 sticks butter, softened
  • 1 teaspoon Worcestershire sauce
  • 2 cups all-purpose flour
  • ½ teaspoon kosher salt
  • 1 teaspoon hot sauce
  • 1 teaspoon smoked paprika
  • 1 pound extra sharp cheddar cheese, freshly shredded
  • 12 oz bag whole pecans

Directions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In your stand mixer with paddle attachment, beat softened butter, hot sauce, and Worcestershire sauce until well blended.
  3. Add flour, smoked paprika, and salt. Beat well, scraping down the sides of your bowl to fully incorporate all ingredients.
  4. Add the freshly shredded cheese and beat until fully combined and the dough comes together.
  5. Chill dough for at least 2 hours (this makes it easier to handle and helps the wafers hold their shape).
  6. Roll chilled dough into 1-inch balls and place on prepared baking sheets, spacing them about 2 inches apart.
  7. Press a whole pecan into the center of each wafer, flattening slightly.
  8. Bake for 18 to 20 minutes until edges are lightly golden brown.
  9. Cool on baking sheet for at least 5 minutes, then transfer to wire rack to cool completely.
