Having friends over on Friday nights for drinks is a long standing tradition in our house.
We serve small bites and there is always lots of laughter. Having a quick recipe to prepare makes for an always enjoyable time with friends.
INGREDIENTS
Crostini
Fresh baguette
1 stick butter
2 teaspoons Herbs de Provence
Herbed Goat Cheese
4 ounce log of goat cheese, room temperature
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh oregano
1/2 teaspoon chopped fresh rosemary
DIRECTIONS
- Preheat oven to 350°F, line cookie sheet with parchment paper.
- Slice baguette into 1/2 slices.
- Melt butter in microwave for 1 minute, stir in Herbes de Provence.
- Brush butter mixture onto bread, bake for 12 to 15 minutes until crisp.
- Mix softened goat cheese to soften, stir in fresh herbs.
- To assemble spread herbed cheese goat cheese onto crostini, top with your favorite jam, my choice Tomato Jam.
Yield: 24 pieces
Pair the crostini and herb cheese with Tomato Jam, add in some nuts and olives for perfect small bite platter. If you love tomatoes as much as I do then you will definitely want to try our Tomato Pie and Tomato Jam and Bacon Pinwheels.
