Blueberry Compote

INGREDIENTS

1 cup sugar

1 cup water

1 cup fresh blueberries

DIRECTIONS

  1. Combine 1/2 cup of the blueberries, sugar, and water in a small, heavy saucepan. Bring to a boil. Reduce heat and let simmer, stirring often, until blueberries burst, about 10 minutes.

  2. Stir remaining blueberries into the simmering mixture. Continue to simmer until compote thickens and coats the back of a spoon, about 8 minutes.

    Yield: 1 pint

    Serve the compote along with the Blueberry, Brie and Sirloin Crostini.
