Blueberry Vinaigrette
Capture the essence of summer in this delicious addition to your salads.
INGREDIENTS
1 cup smashed blueberries
1/4 cup Champagne Vinegar
3 tablespoons honey, local is best
1 tablespoon fresh, squeezed lemon
1/2 cup best quality olive oil
Salt and pepper to taste
DIRECTIONS
Add vinegar, honey, lemon juice and olive oil in a wide mouth glass jar, using a stick blender blend until your dressing is emulsified.
To smash blueberries, place them in a bowl and with the back of a spoon or bottom of a glass and smash until the berries begins to release juice.
Stir the blueberries into the dressing and pour into a bowl. Dress your salad according to your preference, mine is to dress my salad individually as opposed to the entire salad in case we have leftovers for lunch the next day.
