Pimento Cheese Jalapeño Popper Dip

INGREDIENTS

1 10 oz container In the Curious Kitchen Pimento Cheese

6 Jalapenos

2 4oz blocks of cream cheese

1 12oz pack of thick cut bacon of choice

DIRECTIONS

  1. Preheat oven to 400 degrees F. Slice off the stem end of your jalapeños and cut peppers in half lengthwise. Remove the seeds and membrane from the halved peppers. Arrange jalapeños, flesh side up, evenly on a parchment lined baking sheet. On a separate parchment lined baking sheet, place bacon slices side-by-side avoiding overlap.

  2. Cook the bacon for 10 to 20 minutes or until it's reached your desired level of crispiness. Roast your jalapeños at the same time for 25-30 minutes or until skin is wrinkled and brown in color.

  3. Once ingredients are fully cooked, remove bacon and jalapeños from oven and turn temperature down to 350 degrees F.

  4. Allow peppers and bacon to cool briefly before handling. Coarsely chop roasted jalapeño peppers and cooked bacon, setting aside for later.

  5. In a 8x8 Pyrex, or similar oven safe baking dish, coat the bottom of your dish with an even layer of cream cheese. For the next layer, sprinkle bacon and jalapeño bits on top of the cream cheese, leaving about 1/4 cup of each to use as a garnish later.

  6. Using a 2 in cookie scoop, or tablespoon measure, place 9 evenly sized scoops of In the Curious Pimento Cheese along the entire surface of your dip.

  7. Cook for 10-15 minutes, or until Pimento Cheese has spread and cheese is bubbling. Allow to cool briefly before enjoying.
