Turkey, Goat Cheese and Bourbon Blueberry Sandwich

INGREDIENTS

1 fresh baguette

2 tbsp In the Curious Kitchen Bourbon Blueberry Jam

2 tbsp soft goat cheese

2 to 3 slices of turkey

1 heaping handful of baby arugula

Olive oil

Vinegar or lemon juice

Salt

Pepper

DIRECTIONS

  1. Warm a fresh baguette in the oven or in a pan. Using a serrated knife, first slice baguette in desired sandwich portion (4-6 inch). Slice baguette crosswise to open.

  2. Drizzle inside of each slice of baguette with olive oil. In a well heated pan, toast the inside of your baguette slices.

  3. Spread softened goat cheese on one slice. Spread Bourbon Blueberry Jam on remaining baguette slice. Layer on 2 to 3 slices of turkey.

  4. In a small bowl, sprinkle salt and pepper on one heaping handful of arugula. Drizzle with olive oil and vinegar or lemon juice. Mix until arugula leaves are coated.

  5. Close sandwich. Cut in half and enjoy!
