Vegetarian Dip

My daughter Lily is a vegetarian so I wanted to make sure that she has a wide variety of snacks to enjoy at our family celebrations. To make this vegetable platter even more special is that is served on my Grandmothers silver tray. Lucky to have so many of my family treasures to enjoy and share with my girls and Steve.

INGREDIENTS

1 and 1/2 cups shelled pistachios (7 ounces), chopped

1 large shallot (minced)

1/4 cup white wine vinegar

1 cup Hellmans mayonnaise

2 tablespoons fresh squeezed lemon juice

1 large garlic clove (minced)

1/2 cup extra-virgin olive oil

2 cups sour cream

1/4 cup minced flat-leaf parsley

1 teaspoon dried chervil

Salt and freshly ground pepper

DIRECTIONS

  1. Place all ingredients in bowl, stir until completely combined. Place in container and refrigerate until ready to serve.


    Yields: 2.5 cups

    Serving Suggestions: Serve dip in your favorite bowl and tray, make it fancy if you like but always enjoy the flavor. Serve along side of your favorite colorful vegetables.
