Oh So Good Chili

We moved in to our current home in the Fall of 2004. Once all the boxes were unpacked or at least hidden in the basement it was time to invite friends over to celebrate our new home.

I have created a delicious version that celebrates all those friends who we welcome into our home. It feeds a crowd and with the addition of an assortment of toppings a complete meal can be enjoyed. A fond memory of mine growing up was my Mom hosting her friends over for special occasions and chili was always on the menu. I have tweaked the recipe over the years but it was inspired by her original recipe.

INGREDIENTS

2 pounds ground chuck

1 large sweet onion, chopped

4 garlic cloves, chopped

4 tablespoons paprika

3 teaspoons cumin

3 teaspoons dried oregano

1 teaspoon cayenne pepper

1 tablespoon Kosher salt

3-14.5 ounce cans tomato sauce

2-16. ounce cans chili beans

1-32 ounce carton chicken stock

DIRECTIONS

  1. In large stock pot or dutch oven, sauté ground chuck and onions over medium heat for 15 minutes.

  2. Add in all spices, cook until the liquid has cooked off, stir occasionally.

  3. Add in tomato sauce, chicken stock and chili beans, stir to combined.

  4. Bring to boil, reduce the heat, simmer, stirring occasionally until thickens.

Yields: 12 servings

Serving suggestions: Serve with an assortment of toppings such as cheddar cheese, onions, crackers, bacon bits, sour cream and jalapeño.
